Kale-sadillas

Hey guys! Just came from the gym and was looking for something to eat because after such a long day I was starving! Chipotle was a big no no for me because I am only eating home cooked vegan meals this week.

Came up with my own twist on quesadillas really quickly and thought I would share.
(I know, I know they’re not triangle-shaped but I had to make do with the lavash flat bread I had)

Ingredients

Kale
Chickpeas
Sunflower seeds (optional)
Trader Joe’s Lavash flatbreadbread
Soy cheese

So I lightly oiled my pan with coconut oil and sautéed my kale, chickpeas and sunflower seeds and set aside

Afterwards I took half of a half of the flat bread and put in the pan to heat up add the soy cheese and allow to melt. Put some of the kale mixture on top of the cheese and then cover with your half of a half of flatbread. Once bread is toasted flip to toast the other side.

Allow to rest and enjoy!
